Our Cuisine
The cuisine at Torri dell’Acqua is a vertical journey—just like its architecture: it begins on land, moves through the sea, and rises toward the essence of the seasons. A path guided by the quality of raw ingredients and a gastronomic vision that blends respect, technique, and emotion.
In summer, fresh seafood takes center stage. The menu becomes light yet bold, with dishes that highlight the purity of the ingredients and the simplicity of the cooking methods. Every dish carries the breeze of the harbor, the light reflected on the sea, the spontaneity of the South. Flavors are clean, distinct, recognizable—never forced.

Raw seafood
is the signature of the warm season: red prawns, tuna, oysters, sea truffles, sea urchins, and shellfish are selected daily based on the catch, ensuring a level of freshness that needs no disguise. The presentation is essential; elegance lies in balance, perfect temperature, and attention to detail that enhances rather than distracts.

Authenticity of Land and Sea
As summer gives way to winter, the cuisine becomes deeper and more enveloping. Meat takes the spotlight with selected cuts and slow cooking techniques, accompanied by seasonal ingredients that bring warm colors and comforting textures to the table, typical of autumn and winter. Each dish is crafted to warm, to tell a story, to evoke emotion.
The two souls—land and sea—coexist harmoniously throughout the year, in a menu that evolves naturally and subtly, guided by ingredient availability and the chef’s inspiration. There is no rigidity, only rhythm. No trends, only authenticity.

First courses are the perfect meeting point between tradition and innovation: handmade fresh pasta, perfectly creamy risottos, and interpretations that honor the legacy of Italian cuisine while leaving room for personal flair. The result is a culinary offering that convinces without overpowering, surprises without excess.

The Dessert That Tells a Story
The journey ends with desserts, conceived as a sweet and gentle signature that completes the experience without weighing it down. Pastry here is not mere decoration, but a technical and emotional expression: every dessert is the result of balance, creativity, and restraint. A final indulgence, yes—but also one last opportunity to express the identity of Torri dell’Acqua.
This is not just a cuisine to taste. It is a cuisine to listen to, to observe, to remember.
